Am Backtag Nektarine in kleine St\u00fccke schneiden und mit je einem Teel\u00f6ffel Butter und Honig kurz and\u00fcnsten, erkalten lassen. Weiche Butter mit Zucker schaumig mixen, Ei\/Eiwei\u00df und Ricotta zugeben und verquirlen. &#8218;Safranbrand&#8216; unter r\u00fchren. Mehl, Mandelmehl, Backpulver und Salz mischen und unter das Butter-Gemisch r\u00fchren. Erscheint der Teig zu fest, noch 2 EL Milch unterr\u00fchren. Einige Nektarinen f\u00fcr den Belag von der Gesamtmenge trennen und den Rest vorsichtig unter den Teig heben. In gefettete Muffinformen streichen, mit Nektarinen belegen, leicht eindr\u00fccken und mit Zucker berieseln.
